- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) Sanitizer (bleach) for the 3 compartment sink was tested and measured at a concentration below 10 ppm during inspection. Public Health significance - Chemical (bleach, QUATS, or iodine) sanitizers must provide an effective concentration to allow for the removal of potential pathogens that can cause foodborne illness.
- Corrective Action: Operator emptied and refilled the sanitizing sink with fresh sanitizer (bleach) that tested and measured at 100 ppm. Operator re-soaked all dishware (previously sanitized in the ineffective bleach solution) in the newly prepared sanitizer solution. Monitor and change the sanitizer solution when the concentration is tested and does not measure at an effective concentration of 100-200 ppm.
- 304 - Premises not free of pests [s. 26(a)]
- Observation: Mouse droppings were observed behind the dishwasher during inspection. Public Health Significance - Food premise must be free of pests to prevent the spread of disease on food-contact surfaces that can cause foodborne illness.
- Corrective Action: Operator to dispose, clean, and sanitize behind the dishwasher to rid of mouse droppings. Monitor the area and set up traps to rid of mice. If the issue persists, enlist a pest control company to monitor and control pest activity.
- 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: Open windows without screens were observed in the kitchen at the time of inspection. Public Health Significance - Screens must be used in food processing facilities to prevent the entrance and accumulation of carriers of disease (flies) capable of contaminating food that can lead to foodborne illness.
- Corrective Action: Operator to install screens on kitchen windows (with the exception of the take-out window).
- 401 - Critical Adequate handwashing stations not available for employees [s. 21(4)]
- Observation: (CORRECTED DURING INSPECTION) Empty soap containers were observed at all hand sinks within the food premises during inspection. Public Health Significance - Hand sinks must be equipped with soap, warm running water, and paper towel to prevent the spread of potential pathogens that can contaminate food and lead to foodborne illness.
- Corrective Action: Operator replenished the soap at the kitchen hand sink. A soap container was ordered for the hand sink in the dinning area used by dining patrons.
