- Observation (CORRECTED DURING INSPECTION): A large bucket of cooked vegetable sauce was observed in the walk-in cooler; internal temperature 48C. It was stated that sauce was cooked approx. 2 hours ago.
- Corrective Action(s): Sauce transferred to a shallow container and placed back in the walk-in cooler to facilitate rapid cooling. Ensure potentially hazardous food is cooled from 60C to 20C within 2hr then from 20C to 4C within the next 4h to limit the growth of potential pathogens.

- Corrective Action(s): Ensure that once cans are opened, the contents are transferred into another food grade container with a cover if they are to be stored as cans can rust and contaminate food over time.
- Ensure food is stored in only foodgrade containers. Ensure garbage bags are not in contact with food, even if they are new, as they may contain plastics or other chemicals (e.g. odour suppressing chemicals) that can contaminate food.
