      • Observation (CORRECTED DURING INSPECTION): A large bucket of cooked vegetable sauce was observed in the walk-in cooler; internal temperature 48C. It was stated that sauce was cooked approx. 2 hours ago.
      • Corrective Action(s): Sauce transferred to a shallow container and placed back in the walk-in cooler to facilitate rapid cooling. Ensure potentially hazardous food is cooled from 60C to 20C within 2hr then from 20C to 4C within the next 4h to limit the growth of potential pathogens.

      • Observation (CORRECTED DURING INSPECTION): - Kadai has a build-up of encrusted deposits on the inside cooking surface.
      • - Immersion blender had dried on food debris near the blade.
      • Corrective Action(s): - Kadai was set aside for deep cleaning / degreasing and sanitizing (as a final step once all deposits are removed and surfaces are cleaned and rinsed).
      • - Immersion blender was cleaned and sanitized during the inspection.
      • Ensure all food contact surfaces, equipment, and utensils are properly cleaned and sanitized. Food and other debris can introduce contaminants.

      • Observation (CORRECTED DURING INSPECTION): A buildup of food and other debris observed in utensil bin.
      • Corrective Action(s): Utensils and bin were washed and sanitized during the inspection. Ensure all equipment and utensils are maintained in sanitary condition to avoid contamination of food.

      • Observation (CORRECTED DURING INSPECTION): - 3 open cans of tomato sauce/paste were observed in the walk-in cooler
      • - cinnamon sticks stored in a cardboard box for nitrile gloves. Garbage bags (new) stored directly in contact with cinnamon sticks.
      • - food stored directly on floor (paper bag of panko bread crumbs).
      • Corrective Action(s): Ensure that once cans are opened, the contents are transferred into another food grade container with a cover if they are to be stored as cans can rust and contaminate food over time.
      • Ensure food is stored in only foodgrade containers. Ensure garbage bags are not in contact with food, even if they are new, as they may contain plastics or other chemicals (e.g. odour suppressing chemicals) that can contaminate food.
      • Ensure all food is stored off the floor to protect from potential contamination.

      • Observation: Storage areas are unorganized and items were being stored on the floor, including under/behind prep tables. Food debris observed on the floor under equipment.
      • Corrective Action(s): Ensure all storage areas are properly organized, and items are stored off the floor to allow for proper cleaning. Remove items that are not required for business use as space is limited, and to help minimize potential harbourage areas for pests. Date to be corrected by: July 2, 2025.

      • Corrective Action(s): Staff were directed to discard the jug. Ensure equipment/utensils are in good working order and crack-free. Cracks cannot be effectively cleaned and sanitized, and can potentially chip further and physically contaminate food.
