- Observation: 1) The exhaust canopy requires to be professionally cleaned, as the service sticker indicates this should of been done in November 2022. The build up of grease and dust is a fire hazard and will attract pests.
- 2) The floor in food processing and service areas, and in the dishwashing room has accumulated dirt and stains on them. This is especially seen along the base of walls; under equipment, shelves, and prep tables; and high traffic areas. This will attract pests.
- Corrective Action(s): 1) Immediately call a company to clean and service the exhaust canopy. Ensure the professional cleaning of this equipment is done as at least every 6 months.
- 2) Deep clean the floor to remove the dirt and stains. Ensure to move equipment, shelves, racks and prep tables so the floor underneath is exposed and can be cleaned. Increase the frequency the floor is scrubbed and deeply cleaned.

- Observation: First refrigerator on right hand side (from customer area) temped at 7.5C. Operator informed me that the unit has been problematic. Food was moved to a cooler capable of maintaining the required </=4C so the growth of foodbourne pathogens could be properly inhibited. Please contact qualified technician for repair. Refrigerator may be used once it is capable of maintaining 4C
