- WALK-IN COOLER CEILING FINISH:Observed a significant amount of what appeared to be black mold on the ceiling in front of the fan units (two far right fans only) and subsequently requires a thorough cleaning to remove this accumulation from both the ceiling and fan covers.As discussed, the potential health concern is the black mold falling into the uncovered bins of raw meat which could result in contamination.Noted from the owner/operator that the frequency of this cleaning is typically quarterly throughout the year.

- Observed significant amount of dead flies inside the covers of the ceiling light fixtures in the meat processing area. Due to the height of the ceilings, this task will need the use of scaffolding to safety carry this out.Would suggest completing this task during the slow period of your operations - subsequently, deadline to complete would be December 31, 2024.

- Confirmed with the owner that the light covers which had been observed to have dead flies within the fixture had been cleaned - in compliance.However, replace burnt out light tube in the meat processing area to provide more lighting for work tasks and cleaning task purposes.
