      • Personal storage items such as coffee cups were stored on one of the counters in the kitchen. Staff removed it onsite.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A significant gap was observed below the back delivery door that could be an entry point for pest. Please repair and install a weatherstripping.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • A section of flooring (in front of the dishwashing sinks) was in disrepair. Please repair, ensure that the floor surface is smooth, durable, easily cleanable.

      • 1) Wet used cleaning cloths were stored on the front service counter.The cleaning cloths were stored in a sanitizer bucket at 100 ppm.2) Sanitizer buckets did not detect any sanitizer with the chlorine test strips.Fresh sanitizer buckets were prepared and measured 100 ppm.

      • Serving utensils were stored on top of the hot holding unit lids.The serving utensils were washed in the dishwasher and stored in hot water that was stored on the grill at 77.7°C.Ensure serving tongs/utensils are stored in ice water between uses at 4°C or less, in hot water between uses at 60°C or greater, stored in a sanitizer solution at the correct concentration (100ppm Chlorine/ 200ppm QUATs), or continuously switch out serving utensils with new utensils.

      • Falafels were stored on the counter next to the deep fryer with an internal temperature of 27.7°C.Food items were discarded.

      • The indicated foods were measured on the prep cooler inserts:Hamas - 6°CGarlic - 8°CHabanero - 12°CPasley - 11°COnions - 10.2°C Tomatoes - 11.8°CFatouch salad - 9°CPepper - 12.8°C.The food inserts were uncovered.Ensure the indicated foods are maintained at 4°C.Ensure food inserts are covered with lids to prevent cold air from escaping and the mixture of hot air generating from the vertical broiler with the food.
