      • Observation (CORRECTED DURING INSPECTION): 1. Garlic in oil observed stored at room temperature.
      • 2. Inserts beside the stove probed at 6-8C. Staff stated the prep cooler lid was left open during lunch rush.
      • Corrective Action(s): 1.Garlic in oil newly made today. Had staff put it in cooler.
      • Only take out enough garlic in oil for 2hours of use.
      • Max 2hours of room temperature storage of garlic in oil.
      • 2. Instructed staff to place inserts in cooler compartment to maintain 4C and below

      • Observation (CORRECTED DURING INSPECTION): 1) Cheese insert in the prep cooler was over stocked where temperature at the bottom was at 3C and temperature at the top was at 13C. Operator restocked cheese 2 hours ago.
      • 2) Garlic butter (36C) and Garlic oil (32C) observed on counter top. Operator reports these were removed from cooler 1 hour ago.
      • Corrective Action(s): 1) Operator removed top half of the cheese and relocated to working cooler. Do not over fill inserts of food to ensure food is kept below 4C at all times
      • 2) Operator relocated Garlic Butter and Garlic Oil at the time of inspection. Do not keep garlic oil or garlic butter in room temperature as it can be a potential source of C. botulinum toxin.
