- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- The vendor did not have a supply of food contact surface sanitizer during the inspection.
- 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
- The coolers containing potentially hazardous food items, including raw fish, were measured at 10 Celsius. The coolers were filled with crushed ice during the inspection. It is strongly recommended that the vendor obtains additional refrigeration space due to the risk associated with the products that the vendor sells.
