- Observation: Walk-in Freezer unit was observed at -11°C. Freezer Temperatures are slightly elevated (greater than -18°C) (Public Health Significance) Freezing temperatures for perishable foods must be -18°C or less to prevent food from thawing and inhibit growth of disease causing microorganisms and toxin production that may lead to foodborne illnesses.
- Corrective Action: Move potentially hazardous foods to working freezer units immediately-or have the unit serviced. Monitor and log temperatures regularly, adjust and have repaired as necessary to provide a temperature of -18°C or less at all times.

(Public health significants) the written document is a useful tool that describes how to limit food-related risks and reduce the likelihood of foodborne illness caused by improper food handling.
