    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: (CORRECTED DURING INSPECTION) The stainless tongs used to hold processed foods are not well stored during operations (Public Health Significance). Improper storage tongs could introduced physical, chemical or biological contaminants on processed food.
      • Corrective Action: Stainless tongs were immediately removed and new tongs stored away in dedicated holders. Ensure that tongs that are not properly stored are removed, washed, cleaned and sanitized before re-use.

    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: A gap exists between the clean out pipe and waste pipe under the three compartment sink that can allow the entry and harbourage of pests. The dishpit is a common area for pests and the area needs to be maintained.
      • Corrective Action: Repair gaps around pipes in the dish pit to prevent the harbourage of pests.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: The seal between the flooring and the wall in the walk in chicken cooler was in disrepair. Gaps in the seal along the floor will allow moisture to be absorbed into the wall.
      • Corrective Action: Repair the seal along the floor of the walk in chicken cooler so that it is impervious to moisture and can be easily cleaned.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: The door sweep on the chicken cooler was broken. Gaps in the door sweep may alter the temperature in the cooler and allow the entry of pests. In appropriate temperature controls can cause microbe growth on foods.
      • Corrective Action: Repair or replace the door sweep on the chicken cooler.
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Tiles were missing in two areas (above the entry door to the walk in freezer and below the counter near the drive thru). Uneven surfaces cannot be cleaned properly. The wall near the front door entry was in disrepair.
      • Corrective Action: Repair the areas with the missing tiles and gaps near from door wall such that the walls are smooth, impermeable to moisture and easy to clean.
