    • 302 - Critical Repeat Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) QUAT sanitizer solution in the spray bottles was measured at 100 ppm, which is below the recommended concentration of at least 200 ppm. In addition, wet wiping cloths were left on top of the spray bottles in between use. Cloths, once used and left at room temperature, can harbour and promote the growth of bacteria
      • Corrective Action: Store wiping cloths in a sanitizing solution of 100 ppm chlorine or 200 ppm QUATs. Mix according to the manufacturer's specifications. Ensure there is a method in place ( e.g., test strips) to determine the concentration of all sanitizer solutions, including chlorine used in the dishwasher, iodine used in the glassware washer, and QUAT used for food contact surfaces.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) Foods were left uncovered and wiping clothin contact with the cut celery leading to cross contamination. (Public Health significance) - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
      • Corrective Action: Cover or otherwise protect all foods from contact with objects that can lead to cross contamination. The cut celery in insert was discarded
    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Ice making machine has biofilm build up (Public Health Significance) When the biofilm dislodges can lead to contamination of ise which is a ready to eat food
      • Corrective Action: Clean and sanitize the ice making machine and throw away any ice contaminated with biofilms
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) Wiping cloths left on the counters between use. (Public Health significance) - Cloths once used can harbor and grow bacteria if left as used at room temperature.
      • Corrective Action: Store wiping cloths in a sanitizing solution of 200 ppm chlorine or 200 ppm QUATs. Mix according to the manufacturer's specifications.Operator to provide more buckets to store wiping cloths in the sanitizer

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) One box containing food items was on the floor of the walk-in cooler.
      • Corrective Action: Operator placed this box on the shelf in the cooler. All food and food items must be maintained a minimum of 15 cm (6 in.) off the floor on racks, shelves or pallets.
