- - The weatherstripping at the threshold of the exit door near the dining room and washrooms is showing signs of disrepair. A significant amount of visible light is present at the bottom of the door. Please ensure the weatherstripping is replaced to minimize the risk of pest entry into the building.

- - A bucket of QUAT based sanitizer was below the 200 ppm required concentration. The staff were notified, and the solution was remade.

- - Observed raw chicken in the walk-in refrigeration and breaded chicken in the under coolers that are not properly covered to minimize the risk of contamination. The staff were notified of the deficiencies, and the identified food products were shortly after covered.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- One of the baffle filters is not fitting into place in the exhaust hood system, as it continues to pop out of place. Please ensure all filters are able to fit in place to allow for the exhaust hood system to work effectively. Possible reason for this deficiency could be:1) The filter might be bent or warped.2) The filter frame could be the wrong size or not aligned with the grooves. 3) The latching mechanism or clips might be worn out of misaligned. 4) grease or debris build up, blocking the filter from sitting properly.5) The hood frame or track might be bent or warped.6) Factory defect in that particular filter or slot.

- - An accumulation of food debris observed in the under coolers near the front. The staff were notified, and the debris was cleaned up.

- QUAT solution in the surface sanitizer buckets were measured at 100 ppm. Action1) The sanitizing solutions were replaced with new QUAT solution (200 ppm) immediately.

- i) A food item called "crackling' use in making gravy was being stored open at the staff table at the back of the kitchen near the dry storage areaii) Operator also mentioned that they make the gravy in the back area as well.Actioni) Operator was asked to move the crackling to the food prep area in the kitchen immediately and moving forward. ii) Also, to ensure that the gravy is prepared in the food prep area.

- i) Personal belongings of food handlers were found in food storage areasii) Cartons of food products were found sitting on the floor in the walk-in freezer. Actionsi) Please ensure that staff members adhere to proper food safety practice and that staff belongings are kept at designated places ii) Ensure that food products in the storage rooms are kept 6 inches above the ground to avoid contamination.
