    • Poor Sanitary Design, Construction, Installation of Equipment & Utensils
      • The backflow preventer vent drains are to be directed to a gray water collection drain or similar. Items are not to be directed into the wash sink and scullery sinks.
      • Ensure to direct the backflow preventer into a grey water drain system and not onto the scullery counter and dishwash sinks.
    • Improper Construction / Maintenance of Establishment
      • The Bar glass wash machine was not properly calibrated at the time of inspection. Facility is awaiting Ecolab to commission the equipment. Iodine solution was working but unable to verify at the time of inspection.
      • Ensure that the hood-type dishwasher is being used to wash, rinse, and sanitize the glasses that would normally be cleaned in the glass-wash machine. Provide a confirmation of proper iodine strength when Ecolab commission the equipment to our office. Comments Initial Inspection - Verified layout of facility as per approved layout floor plan - Acceptable - Handwash sinks within compliance - Equipped with hot/cold water, soap and paper towel - All fridges and freezers were operational and within temperature. Ensure that each unit has a ambient air temperature thermometer - New grease-laden ventilation system is stilled. Provide the fire inspection report to our office. - Seal any raw food within the kitchen (Door frame inside of kitchen) and shelves used for storing food and food contact items. - Hood-type dishwasher verified - 200ppm of chlorine solution. - Surface sanitizer available - Chlorine solution. - Ensure shelves used inside walk-in fridges and freezers are durable and easily cleanable. Items have not yet arrived. Ensure that items are stored off the floor. - All equipment was new for initial inspection. Ensure that all items are washed, rinsed, and sanitized before use. - Staff washroom fully equipped and functioning. - Male and Female patron washrooms fully equipped and functioning. Permit to be issued for facility.
