      • Previously cooked and cooled meats were in the warming unit. The middle of the pulled pork container measured 35C and the outer section measured 80C. High risk foods that have been previously cooked and cooled must be reheated to 74C or higher in a manner that they will passthrough the Danger Zone as quickly as possible. Operator stated the meat procedure will be updated where meats are reheated in the commercial kitchen before transporting to warming units in the truck for events. For now, the operator was instructed to reheat all meat on the grill.
