- 1. Portioned bulk products such as prosciutto are not being date labelled- Ensure the best before date is being transferred onto the new portioned packaging. And/or add the prepared-on date if no best before date exists or if the product is frozen prior, write the date it is thawed for FIFO.2. Temperature logs are not being completed for bar cooler with perishable food products- Ensure temperature monitoring is in place for all cold holding units.
