- 1) Test strips for QUAT sanitizer were stained/expired in 2022. - Please acquire new test strips to adequately test the sanitizer concentration.2) No water-proof thermometer was available to test the max temperature of the dishwasher. - Please acquire a waterproof thermometer.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- Sides of the back counter were chipped exposing raw wood. There was also a raw wood block in the chocolate storage room. - Please seal/replace these areas so that they are smooth/non-porous and easily cleanable.
- 23. Is the facility maintained in a clean and sanitary condition?
- There was some chocolate build-up on the walls of the chocolate storage room. - Please clean the walls.
