      • Observation:- Dirt and dried food residue were observed on bulk food storage containers.Action Required:- Thoroughly wash, rinse, and sanitize all bulk food storage containers.

      • Observation:- Metal bowls and deli cups were used as scoops for bulk foods and were stored directly in contact with the food inside the containers.Corrective Action Required:- Provide appropriate scoops with handles for dispensing bulk foods and store them in a sanitary manner that prevents contamination of the food (e.g., in a clean holder or with handles positioned above the food).

      • Observation:- Accumulation of food debris was observed on the shelves and floors of the kitchen coolers.- Dried food residue was observed on cooler doors and handles.- Buildup of black grease and food residue was observed on the dishwasher door.- Heavy grease accumulation and mold growth were observed on the dishwasher tray.Corrective Action Required:- Thoroughly clean and sanitize all affected equipment, including kitchen coolers, doors, handles, and the dishwasher.- Replace the dishwasher tray to eliminate mold growth and ensure the equipment can be properly cleaned and sanitized.- Maintain all equipment in a clean and sanitary condition at all times.
