- Observation: (CORRECTED DURING INSPECTION) Employees do not maintain sanitary use of wiping cloths. Dirty wiping cloths are tucked in their personal attire instead of being stored in a sanitizer bucket (Public Health Significance) Dirty and filthy wiping cloth is a source of transfer of pathogen on food contact surfaces, soiling of food handlers' hands and could lead to transmission of foodborne illnesses.
- Corrective Action: Remove all dirty wiping cloths tucked in the attire of the food handlers, prepare 200ppm QUAT solution, store wiping cloths in sanitizing buckets always, and replace the sanitizer in the bucket every 2 hours or when visibly soiled.
- 403 - Employee lacks good personal hygiene, clean clothing and hair control [s. 21(1)]
- Observation: (CORRECTED DURING INSPECTION) Personal belongings are store in food processing area (Public Health Significance) Physical, chemical and biological contaminants can be carried in the personal belongings and deposited on the food and food contact surfaces.
- Corrective Action: Remove all personal belongings immediately from the food preparation area.
