    • 9(a) An operator must renew a permit, other than a temporary permit, on or before the expiry date by submitting a completed renewal application to the Minister on a form approved by the Administrator together with all of the following: (a) the applicable fee prescribed in Section 5;

    • 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
      • The temperature in the salad preparation refrigerator was 11 Celsius at the beginning of the inspection. The temperature in the sandwich preparation refrigerator was at 8 Celsius at the beginning of the inspection. Neither the salad preparation refrigerator nor the sandwich preparation refrigerator were capable of reaching the required temperature of 4 Celsius during an hour of observation. The salad and sandwich refrigerators did not achieve a temperature below 8 Celsius during the hour of observation. Recorded food temperatures from inside these refrigerators were at between 9 and 14 Celsius internal temperature. The sandwich preparation refrigerator was displaying an error code that indicates that the temperature was abnormally high. The requested temperature log for the refrigeration units had not been maintained since August 2024. Potentially hazardous food items in the sandwich and salad preparation refrigerators were discarded. Read and understand the operating manuals for the preparation refrigerators. Do not overstock the preparation refrigerators. If the method of operating the preparation refrigerators regularly allows the temperature to exceed 4 Celsius for multiple hours, then adjust operating procedures in line with the refrigerator manufacturer's instructions to prevent temperature abuse of food in the preparation refrigerators. Record the temperature of the preparation refrigerators twice daily in a log to identify trends or malfunctions in equipment and prevent spoilage. It is not enough that the refrigerator 'feels cold' as this is subjective. Do not store potentially hazardous food in these refrigerators until they are demonstrated to be able to maintain the appropriate refrigeration temperature during operation. The dairy at the coffee station was recorded at 14 Celsius. This dairy must be held at or below 4 Celsius. Surround the dairy products with ice or ice packs. Ice packs underneath the dairy products will not suffice.
    • 37(1) If directed by an inspector, a food establishment must maintain records that demonstrate the quality assurance system used to ensure food safety in the processing or preparation of a food.
      • Implement, maintain, and monitor temperature logs for the refrigeration units in the establishment to identify trends, malfunctions, or potential spoilage of food products in the refrigerators.
