      • The stand-up deep freeze has a substantial build-up of ice inside. This deep freeze must be thawed, cleaned, and sanitized.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Thoroughly clean and sanitize the floor of the walk-in refrigerator, to include the corners where it appears to have rodent droppings.

      • Prevent rodents from accessing the inside of the walk-in refrigerator. If necessary, retain the services of a registered pest control company to develop a strategy to prevent rodents from entering this refrigerator.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Rodent droppings are still noted along the walls on the floor of the walk-in refrigerator. These droppings must be cleaned up and the area must be thoroughly cleaned and sanitized.

      • Clean and sanitize the rodent affected areas on the floor in the corner of the walk-in refrigerator. Keep these areas clean and sanitized. This compliance issue has not been addressed. This item will be forwarded to the next scheduled inspection report.
