    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 1) The concentration of sanitizer in available spray bottles was higher than 200ppm chlorine.Sanitizer was diluted to 100ppm chlorine during inspection. 2) The concentration of sanitizer from the dishwasher was measured at 0ppm chlorine. Sanitizer container was replaced during inspection. Concentration of sanitizer dispensed from the dishwasher was measured at 50ppm, considered satisfactory given the highest water temperature recorded by the dishwasher. Use smaller sanitizer containers to prevent oxidation of chlorine affecting dishwasher levels.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) The walls behind the dishwashing area were damaged and absorbent in some areas.Operator indicated wall was to be replaced with stainless steel.2) The ceiling above the ice machine was damaged.Repair or replace ceiling tile.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The dishwasher was dispensing chlorine at 10ppm when first operated. Chlorine sanitizer was replaced with a new container during inspection, and the dishwasher measured at 100ppm. Smaller containers of sanitizer are recommended to prevent large amounts of chlorine from oxidizing.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Written records for pest control measures were not available for review at the time of inspection. Prepare written pest control records and have available for review upon request.

      • A build-up of grease and food debris was observed under the fryer unit. Clean indicated area.
