      • Observation(s): Back storage area by walk-in freezer could be reorganized to prevent potential pest harborage sites.
      • F2.2A The premises must be maintained to prevent harbouring (sheltering) or breeding of pests.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Moderate ice accumulation on ceiling and floors of walk-in freezer as a result of a faulty fan.
      • F2.5A All equipment, utensils and food contact surfaces used on the premises must be kept in good working order to ensure the sanitary handling of food.

    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): Internal temperature of hot dogs on roller grill measured at 55 °C. To prevent the growth of pathogens, potentially hazardous foods must be maintained at 60 °C or above. Increase temperature of roller grill to ensure that hot dogs are maintained at 60 °C or above.
      • F1.2A Potentially hazardous foods must be stored or displayed at a temperature of 60 °C (140 °F) or hotter.
    • F2.1 Does the facility have proper monitoring supplies?
      • Observation(s): No thermometers were available in the prep line coolers. Thermometers accurate within 1 °C must be placed in coolers to ensure that potentially hazardous food is stored at 4 °C or below to prevent the growth of pathogens. Obtain and place NSF-certified thermometers in the coolers.
      • F2.1B A thermometer accurate within 1 °C must be available to monitor processes.
    • F2.2 Are proper pest control measures in place on the premises?
      • Observation(s): Back door was observed to be open. Exterior openings of the premises must be protected against the entry of pests and other contaminants. Ensure that the back door remains closed at all times.
      • F2.2B The premises must be protected against entry of pests.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Accelerated hydrogen peroxide concentration measured at 0 ppm at the dispenser and 100 ppm in spray bottles. Hydrogen peroxide concentration must be maintained at a minimum of 500 ppm to ensure adequate sanitation of food contact surfaces. Ensure that hydrogen peroxide concentration is maintained at a minimum of 500 ppm at the dispenser and in spray bottles.
      • F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Wiping cloths were stored in dish soap and water. To prevent growth of pathogens on wiping cloths and limit transfer to food contact surfaces, wiping cloths must be stored in sanitizer solution. Store wiping cloths for continuous use in a bucket of approved sanitizer and change the solution every 2 hours.
      • F2.5C Wiping cloths must be maintained and stored in a sanitary manner.

      • Observation(s): - chlorine and hydrogen peroxide test strips are expired
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
    • F2.2 Are proper pest control measures in place on the premises?
      • Observation(s): - back door was left wide open (including screen door) - no fly light trap in kitchen area
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): - hydrogen peroxide dispenser tested at <500 ppm - dishwasher chlorine residual < 50ppm - vinegar being used for ice basin in bar, use a sanitizer please
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): - exhaust fire suppression due for inspection in June 2023 - floor in disrepair on cooking line - floor under equipment needs a deep clean - light covers need bugs cleaned out
