    • 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator: (b) adequately designed and appropriately located hand-washing facilities;
      • The only hand washing station sink in the food preparation area was not draining at the time of the inspection. This sink must be repaired and returned to normal use.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • A food contact surface sanitizer is needed on site for the safe preparation of food. To prepare a food contact surface sanitizer, mix 2.5ml (1/2tsp) household unscented chlorine bleach with each litre of water in the solution. This must be placed in a labelled bottle if in a spray bottle.
    • 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
      • The food kept in the top portion of the preparation refrigerators were held at a temperature above the maximum refrigeration temperature. Close the lid for the preparation refrigerators when not in use.
    • 34 An operator must ensure that a food establishment is operated so that all food and food ingredients are processed, manufactured, handled, prepared, packaged, served, sold, offered for sale or distribution free of charge, dispensed, displayed and stored in a manner that prevents contamination and adulteration.
      • Freshly shaved donair was placed in a clear plastic storage tote that was not designed for the storage of food. Do not use containers that are not food grade for the storage of food. Contaminated donair discarded.
