      • The high temperature dishwasher required seven runs before reaching an acceptable final rinse temperature at the plate level. Please ensure a technician assesses the dishwasher and temperature requirements can be met without excessive number of cycles.**The high temperature dishwasher after measuring the final rinse cycle with a calibrated probe thermometer was not able to reach the required temperature. Informed operator to only use the dishwasher for washing and rinsing and use the 3 compartment sink to sanitize or use manual procedures with the 3 compartment sink.

      • Three QUAT sanitizer pails (one in the front counter and two in the back kitchen) measured 50ppm when tested. Required concentration is 200ppm. Discussed concern with operator who refilled sanitizer pail with fresh sanitizer. Retested sanitizer concentration for the three pails were acceptable (200ppm).

      • The electrical cord and head from the chicken slicer in the back area was observed to be hanging inside the handwashing sink. Informed staff who removed cord from the sink. Please ensure the handwashing sink is kept accessible at all times for handwashing purposes.
