      • - Observed at this time that manual dishwashing sanitizing solution was not at correct concentration, ~100 ppm QAC.- Directed assistant manager on site to change sanitizing solution in sanitizing sink to correct concentration of QAC solution, 200 ppm or greater.

      • - Observed large amounts of deep fryer grease on the floor, food processing area has dirt and grease build up on floor surfaces, under and behind equipment.- Directed shift supervisor present to have the kitchen and processing areas properly cleaned, and to maintain it in a clean and sanitary condition.- Men's washroom has hand drier deficiency as well as non-functioning urinal.- Directed shift supervisor to have the washroom deficiencies corrected.
