- ***Staff was not using the Quat test strips for checking the sanitizer concentration for the dishwashing. The end was discoloured indicating it had been an extended period of time since it was used. Written procedures indicated that the sanitizer solution was to be tested each time the dishwashing sink was set up. Manager talked to staff person who was to educate the dishwashers. At the end of the inspection the manager ended up checking the sanitizer concentration.
