    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • The ice cabinet at the drive-thru was being left open. The inspector informed the staff and the manager that the ice cabinet must be kept closed at all times. The lid of the ice cabinet was then closed. Please keep the ice cabinet and any other food items covered at all times to prevent any risk of cross contamination during operations.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Washed dishes and utensils were observed drying on dishwasher racks placed directly on the floor. The inspector informed the manager that all kitchen equipment, utensils, and dishwares must be dried, stored, and placed at least 6 inches above the floor to prevent the unintended risk of re-contamination, especially after dishwashing. The manager mentioned that they had nowhere else to put the drying racks. Thus, please develop a plan for properly drying washed equipment and utensils, as discussed.

      • The cream and milk dispenser at the drive-thru area was not cooling adequately. The thermometer on the cooler was at 17°C and the cream stored in the dispenser was measured at 17.9°C. The cream and milk were discarded by the manager during inspection. Please contact a service technician to repair the unit. In the meantime, as discussed during the inspection, the cream and milk will be manually dispensed using jugs and be stored in a cooler immediately after use until the dispenser is fixed an able to cool below 4°C.
