    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Non food contact surfaces must be cleaned at a frequency that prevents the build up of dirt and food debris. Waste must be removed from facility in a timely manner.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Sanitation measures and pest control practices must be implemented to decrease the amount of flies in establishment.

      • Food held at room temperature must be time marked to ensure it does not exceed four hours, after which it must be discarded.
