      • The chlorine-based mechanical dishwasher was run and 0ppm chlorine was detected. The sanitizer line was primed, and the machine was run again, 0ppm was still detected. Please have the dishwasher serviced such that it is sanitizing at 100ppm. Until the dishwasher has been fixed, please manually sanitize all dishes and equipment.

      • Disposable bowls were used to scoop the sugar and stored inside.Replace the bowls with a scoop that has a handle and store scoops in a separate area or with the handle upright to avoid contamination of the food. The operator removed the bowl from the sugar bulk supply at the time of the inspection.
