    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • The kitchen mechanical dishwasher is not providing sanitizer during the rinse cycle. Until this is remedied, the dishware must be manually sanitized.

      • The concentration of sanitizer was too strong at the time of the inspection. Chlorine bleach sanitizer must be mixed as follows: 2.5ml or 1/2 tsp of household unscented chlorine bleach with each litre of water.
