    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • 1) Mechanical high temperature dishwasher (Eurodib purchased from Costco) is not in good working order and currently does not properly drain nor meet the hot water temperature for the final sanitizing step of 82 C (180 F) - will either repair/replace as deemed necessary to ensure it is fully functional/operational.2) Currently, there is only one (1) deep sink for manual dishwashing - the plan is the owner will replace this existing sink with a double (2) compartment stainless steel sinks for more adequate manual dishwashing (in case of non-functioning mechanical dishwasher).3) Single service disposable utensils only - the only reuseable are cast iron skillet(s), tongs, knives, spatula, etc.JUNE 11, 2025 UPDATE/FINDINGS:1) Two (2) compartment sinks in the kitchen for manual dishwashing - the final sanitizing step is chlorine and the kitchen is supplied with chlorine test strip papers for confirming correct concentration which is minimum 100 ppm.2) For the Eurodib high temperature mechanical dishwasher, a Technician offered by Cost Co will be arriving at the facility this Friday June 13 to assess the machine and determine the reason why it is not in good working order. The machine is still on warranty and hopefully the repair costs will be covered and not the responsibility of the owner/purchaser.

      • Noted that Food Safe Certification for the owner was last completed in April 2018 and should be retaken. Will provide owner with our AHS listing of approved on-line food safe courses considered equivalent to our AHS in-person course.
