      • Paper towel roll in a loose dispenser that requires 2 hands to tear off a piece.-Dispense paper towel in a manner that prevents the contamination of the bulk supply

      • Wiping cloths were on the counter. Also observed many wiping cloths air drying after cleaning.-Store wiping cloths in sanitizer-For reused wiping cloths, they must be disinfected or dried in a hot air dryer after washing, and must be stored in an area where they will not be contaminated by other functions in the kitchen

      • 1) Fly light was on the back prep counter.-Locate fly lights away from food contact surfaces2) Mop handle was over a food contact surface.-Store mop bucket and handle away from food handling areas

      • Sanitizer bottle not labeled.-Ensure all chemical bottles are labeled
