Rodent droppings and dead flies removed. facility general sanitation acceptable. More attention needed for non-food contact high touch surfaces. Increase regular sanitation in these areas.

      • Rodent droppings observed in hard to reach area of establishment (behind, below equipment). Dead files present in front cafe double door cooler.
      • Wash, clean, and disinfect in full. Monitor areas, maintain in sanitary manner.

      • Glasswasher iodine test strips not present.
      • Locate or purchase. Monitor and record final sanitizing rinse when in operation. Comments Food safety protective temperatures in compliance. Dishwasher final rinse reached at least 50ppm Cl. Note: several cycles were required, air bubbles or weak lines suspected. Were primed several times. Monitor and fix as required. Glasswasher final rinse reached at least 12.5 ppm iodine. Wash, clean, and disinfect facility n full prior to this weekend's event. Maintain in a sanitary condition. Ensure equipment works as per their indented function.
