      • The QUATs sanitizer bucket measured >400 ppm and was diluted during the inspection.Please mix according to manufacturers instructions for 200 ppm solution - 8 mL : 4 litres of water. This is a reoccurring violation.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The pop fridge was ~9 degrees Celsius. Cheese packages were moved to the mini fridge.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There are no test strips available to check the concentration of QUATs for dishwashing and sanitizing. Please obtain test strips.

      • Handwash station was obstructed. Trashcan and cleaning supplies were placed in front of the handwash station. Please ensure the handwash station is accessible at all times for handwashing.
