- 1. The sandwiches were stored without any ice packs. Provide adequate cold storage. A cooler with ice packs is required to transport and store sandwiches to ensure they remain at or below 4°C.2. A thermometer was not available to take temperature of food. Please keep a thermometer onsite. A thermometer must be available at all times to monitor the temperature of the soup during service.
