      • There were no paper towels at the handwashing station. The operator immediately restocked the paper towels.* Please ensure the handwashing station is always stocked with paper towels and soap.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The wooden ladles were not in good repair. I instructed the operator to discard them, and they were discarded immediately.* Please ensure all cooking utensils are regularly monitored and kept in good repair at all times.

      • Fridge temperature logs are maintained. Cooking temperatures are verified using a probe thermometer. Fridge #1 is going on a gradual upward trend in temperature exceeding 4 degrees. Cook swapped dairy products from this cooler with pickles and whole produce in Fridge #2. Temperature adjusted and will be monitored to ensure it reduces to 4 degrees Celsius. Discussed fridge airflow and cleaning the filter and air intake.
