    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: Observed employees bottled water and travel mug stored directly on food prep counters. Drinks could spill and contaminate food and food contact surfaces. Observed paper cups being used to scoop dry soup base. Use of cups without a handle could lead to bare hands touching food and result in contamination.
      • Corrective Action: Ensure that employees food and drinks are stored at a designated area and below food and food contact packaging. Ensure that only scoops with a handle are used to scoop food and food ingredients.

      • Observation: Observed cans of soups/sauces and food containers in plastic bins stored directly on the floor at the prep area. This could lead to contamination.
      • Corrective Action: Ensure that all food and food contact packaging are stored atleast six inches off the floor. This facilitates cleaning, monitoring of pest activity and prevention of contamination from spill.

      • Observation: Observed raw bacon stored directly on top of container with ready-to-eat hard-boiled eggs. Liquid from raw bacon could leak and contaminate ready-to-eat foods.
      • Corrective Action: Ensure that all raw animal proteins are stored below ready-to-eat foods.

      • Observation: Observed raw shell eggs stored above ready-to-eat foods in the reach-in cooler. Cracked she eggs could leak and contaminate ready-to-eat foods stored below them.
      • Corrective Action: Ensure that all raw animal proteins including raw shell eggs are stored below ready-to-eat foods.
