- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- 1) Food equipment were washed in the single compartment sink used for hand washing next to the tray dishwasher. Food equipment were not sanitized when washed in this sink and access to hand washing was obstructed with soaking equipment. Please ensure all food equipment are washed, rinsed and sanitized. Hand washing sinks must be easily accessible at all times. Take all food equipment to the production room dishwashing sinks or install a separate 2 compartment dishwashing sink in the area.2) There were large pails that do not fit into the 3 comp sink in the production room. Remove/replace with smaller pails or install at a minimum, a separate 2 compartment ware washing sink with each compartment that can accommodate the large pails.

- Unable to determine if the manager/person in care and control of food production is certified in a recognized food safety course. Please submit certificate to AHS.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- A floor mat was hung on the barrier at the 3 comp sink drainboard above clean food containers in the production room. Please relocate the floor mat to separate area that will not contaminate food or food surfaces.
