    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Disposable cup used as scoop for bulk items was stored in the container. Operator removed cup from food.- Ensure scoops with handle are used for bulk items and stored away from the food product or in a separate food-safe container to prevent the risk of contamination of the bulk ingredients.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishwasher was not reaching the correct temperature. Max temp reached was 65.4 C after 6 to 7 cycles. - Repair dishwasher/booster and ensure that the final rinse is reaching a minimum of 71 C at the dish level.- Operator was informed on how to properly use the 2-comp sink for sanitization using QUAT sanitizer.

      • Dish detergent bottle connected to the dishwasher was empty at the time of inspection.- Operator connected new detergent bottle to the dishwasher.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Facility has 2-compartment sink. Dirty utensils were placed in both compartments at the time of inspection.- Operator instructed to designate one compartment of the sink exclusively for handwashing at all times.
