      • Unlabeled food items, including catfish and fufu were observed. Foods may not have been from approved sources.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Food, including various bags of food and meat was being stored directly on the ground.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Raw meat was being held at room temperature. - Meats were left to thaw at room temperature to repackage. Note: Facility does not have refrigeration space. - Fufu, which is perishable, was being stored at room temperature. - a shipment of meat was delivered at the time of inspection. Meat was 0C and was no longer fully frozen.
    • 15. Is the facility free of a pest infestation?
      • Flies were noted in the facility and landing on meat.- Facility is leaving the double overhead garage door open which will allow for the entry of pests.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Gaps noted at the bottom of the large garage door.- Exterior doors must be tight sealing to prevent the possible entry of pests.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • The facility was handling open meat to repackage, which is not permitted under the permit restrictions, which state:Pre-packaged foods and/or whole produce only – no preparation of food.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • - Walls and floors are unfinished.
