- Chlorine in dishwasher measured 0 ppm. Machine was actively alarming at time of inspection. Ecolab as contacted will come out on Monday to service dishwasher. Facility will be manually dishwashing using two sink method. Dishwasher can be used to clean followed by sanitizing utensils and equipment in the sink as last step. Discussed ensuring sanitizer in sink is at least 100 ppm. A follow up inspection will be conducted.

- Overall, cleaning has approved. This facility still needs to continue prioritizing cleaning. The following areas need to be cleaned and sanitized: Under shelving units in the walk-in cooler and walls have spills or a grease build up on them. Please ensure that these areas are cleaned to prevent food contamination. Facility has a cleaning schedule, and manager follows up with staff.

- Food, boxes, cans, oil and pop containers are being stored directly on the floor in the kitchen and downstairs. All products must be stored at least 6 inches off of the floor at all times to assist staff with cleaning and to monitor for pest activity.

- The mini cooler behind the bar area measured 10C. There was a buildup of ice in the freezer area. Staff removed any potentially hazardous items to another cooler and unplugged unit.Garlic butter was being left out at room temperature. Discussed not leaving potentially hazardous foods out for longer than 2 hours. Discussed taking out small portions of garlic product as needed. Staff put garlic butter back into cooler during inspection.Discussed keeping lids down at all times on prep coolers to ensure temperatures are maintained at <4C.

- The dishwasher was dispensing 75 ppm of chlorine. Staff manually added more chlorine tablets to dispenser. Dishwasher measured ~100 ppm.

- No chlorine test strips were available to measure dishwasher sanitizer concentration. Test strips were left with operator. Eco lab visited facility and left a container of chlorine test strips with staff. Discussed taking and recording dishwasher sanitizer levels twice a day. A template will be provided with inspection report.Ensure Quats test strips are obtained from dishwasher technician for surface sanitizer.

A cleaning template for daily, weekly and monthly tasks will be provided with the inspection report.

- Sanitizer spray bottle had 0ppm of the quats sanitizer. This was corrected during the inspection. Corrected sanitizer concentration was 200ppm.
