- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- 1. A section of the prep cooler was measured at 4.9°C using both an infrared thermometer and the internal thermometer. Review of the temperature log showed recorded temperatures of 5°C. The cooler was adjusted during the inspection.
- 20. Do food handlers at the facility have adequate food safety training?
- 1. A kitchen staff member used chlorine test strips when asked to demonstrate how they test the quaternary ammonium sanitizer.Education was provided onsite. Staff were reminded that chlorine test strips are required for testing chlorine/bleach solutions and the mechanical dishwasher.There are separate test strips for the quat sanitizer.
