- 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation (CORRECTED DURING INSPECTION): Hard Surface Sanitizer with label showing 200ppm quats when used full strength may not have required concentration (0ppm quats detected in both main bottle and spray bottle). Operator does not have specific test strips for this sanitizer.
- Corrective Action(s): Chlorine sanitizer (100ppm) set up during inspection to sanitize wiping cloth and food contact surfaces. If using the Hard Surface Sanitizer, check with supplier and provide accurate test strips to verify concentration and use on food contact surfaces as per label.

- 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
- Observation: The sandwich display (self serve) cooler air temperature at all three shelves is at 40 F (4C). This is the maximum air temperature for storage of sandwiches and potentially hazardous foods. The temperature gauge on the bottom of the cooler shows 35F and may not be accurately measuring the temperature for sandwich storage.
- Corrective Action(s): Provide an accurate indicating thermometer for measuring the air temperature at the sandwich display shelves.
