    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • No (update) - the damaged floor tiles in the walk-in freezer and other areas of the food premises have been repaired. Operator and staff to continue with regular maintenance and repair of flooring as necessary.Also, there were some missing fluorescent light tubes at the ceiling fixtures in rear storage at main kitchen (which are to be installed so there is sufficient lighting when necessary, with protective covers). An electrician is to be contacted if issues with ballasts and installation of LED type lighting.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • No - there were damaged floor tiles in the walk-in freezer and other areas of the food premises. Damaged/broken floor tiles are to be repair or replaced, with flooring in the food premises to be smooth, washable, non-absorbent, and in good repair.Also, there were some missing fluorescent light tubes at the ceiling fixtures (which are to be installed so there is sufficient lighting when necessary, with protective covers).
    • 23. Is the facility maintained in a clean and sanitary condition?
      • No - there was observed accumulation of dirt/dust, grime, etc., in behind the above-ground grease interceptor in the dishwashing area, and under adjacent shelving, with more frequent floor washing required in these areas. Also, there was one specific filter in the exhaust hood canopy with heavy grease/oil accumulation, requiring more regular cleaning. Note that the professional cleaning/servicing of the exhaust hood canopy is scheduled for next month (but the filters must be washed at least once per week, or more often as is necessary to maintain sanitary condition).

Damaged/broken floor tiles are to be repair or replaced, with flooring in the food premises to be smooth, washable, non-absorbent, and in good repair.Also, there were some missing fluorescent light tubes at the ceiling fixtures (which are to be installed so there is sufficient lighting when necessary, with protective covers).

      • Yes (corrected during inspection) - note that there were large bags of white rice stored directly on the floor in the rear food storage area. All food products (whether packaged, in boxes, or opened bags) are to be stored at least six inches (15cm) off of the floor, onto racks, shelves, or pallets.

      • Yes (corrected during inspection) - additional fluorescent light tubes (4) and protective shields are necessary in rear food storage area, with two light fixtures not in use at time of inspection. Operator is to ensure all fluorescent light fixtures in main kitchen and rear storage areas are properly installed, so that full lighting is available during times of cleaning, etc.
