      • The pizza product in the hot holding unit was not being hot held and informed by staff that it is prepared and discarded after 2 hours. No documentation or tracking for time was available. Please ensure time is tracked and recorded for when product is required to be discarded.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Frozen slices of pepperoni were observed to be in a container sitting at room temperature to thaw. Informed operator of approved methods for thawing. Please ensure food products are not thawed at room temperature.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No valid sanitizer test strips were available onsite. Please ensure valid test strips are available.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The paper towel dispenser in the kitchen was not working. Potentially a dead battery. Please ensure dispenser is properly working or have paper towels mounted on a roll.
