- Observation(s): The preparation cooler was not operational and the available refrigeration capacity within the mobile unit was insufficient to meet operational needs. The operator was advised to remove non-potentially hazardous items (e.g., soft drinks) from the functioning refrigerator to allow for the proper storage of potentially hazardous foods (e.g., chopped vegetables). An additional refrigerator, provided by the event organizers, was available outside of the mobile unit. Repair or replace the preparation cooler.
