- 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
- Flats of shell eggs were stored above ready to eat foods in the line cooler.Store raw meats/ eggs separately or below produce, cooked or ready to eat foods.
- 09. Are chemicals stored and handled in a safe manner?
- The spray bottle that contained chlorine sanitizer was not labeled to indicate its content.The spray bottle was labeled during the inspection.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- 1) Shelving units in the walk-in units were inadequate.Provide adequate shelving and store foods at least 6 inches off the floor.2) There was no indication that the hanging light fixtures above the steam table were shatterproof/ shatter resistance. Provide documentation or replace with shatterproof/ shatter resistance light fixtures. Alternatively, if lighting is adequate, remove the light fixtures.

- Mixers were dirty with old food debris.Disassemble equipment. Clean and sanitize all parts thoroughly.
- 23. Is the facility maintained in a clean and sanitary condition?
- 1) There was construction debris under the hand sink in the front service area.Clean under the hand sink.2) There was a slight buildup of debris on surfaces such as shelves, prep tables, sinks and the line cooler.The operator began cleaning during the inspection.
