- Observation(s): Please ensure that thermometers are provided inside all refrigeration units and restart daily temperature monitoring records. Please also provide a probe style thermometer for verifying temperatures of food in upper insert sections of prep table refrigerators, as well as, verifying final cook temperatures.

- Observation(s): Please clean surfaces where there was an observed organic build up, including along walls and underneath equipment. Please paint raw wood shelving to ensure cleanability.
