- F1.3 Are proper cooling and reheating procedures followed?
- Observation(s): Large pot of soup was found in the fridge at 25C. Large pots of soup may be placed in the fridge only after being rapidly cooled with either a cold bath or cooling wand. Placing large pots will take too long to cool and will heat up the entire fridge.
- F1.3B Potentially hazardous food must be cooled using appropriate equipment and/or approved methods.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): Under the stove had buildup of grease from use and spills. This should be mopped daily and pulled out occasionally to ensure a good clean.
- F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.
- F2.7 Are there handwashing stations available and properly supplied?
- Observation(s): Handwashing sink in the bar area and the food preparation area of the kitchen are out of order. This must be rectified immediately. Please let me know the timelines of when this will be completed.
