      • All non-shelf stable food items were discarded and not to be used until repaired to cool at =4°C.

      • Large containers of soups stored in walk-in without proper cooling procedures.
      • Soup cooling for =30 minutes was moved to shallow pans to safely cool at 60°C to 20°C in two hours and 20°C to 4°C in four hours. Alternatively obtain ice wands.

      • Some old signs of rodents observed on back dries storage shelving must be cleaned.

      • Hot water for back kitchen hand sink is broken and is known / schedules to be repaired

No signs of pests within the main kitchen areas. Premises is overall well maintained and clean.
