      • Foods in stand-up cooler measured 12C. Potentially hazardous foods moved to other coolers. Please repair or replace cooler.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • All iodine test kits contained strips that were expired. Please purchase new iodine test strips.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Used cleaning cloths were observed sitting on top of a sanitizer bottle outside of sanitizer solution. Used cleaning cloths that are reused should be submerged in sanitizer solution to kill harmful bacteria.***To reuse cleaning clothes, set up sanitizer buckets with chlorine sanitizer solution with the concentration of 100 ppm or quat sanitizer with the concentration of 200 ppm and submerge the cleaning cloths in the solution. Without using sanitizer buckets, cleaning cloths are single use only.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Soap dispenser located on the north side of prep line in front of the walk-in coolers was defective and not dispensing soap.***Please replace the soap dispenser with one in working order.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • Used adhesive fly traps, full of captured pests, were observed at the bars located in the back and on the second floor, posing risks of potential cross-contamination in food preparation areas.***Operator promptly discarded the used adhesive fly traps.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Utensils were observed in sanitizer solution measuring 0 ppm on two cooklines. Food debris in room temperature water with no sanitizer can encourage the rapid growth of harmful pathogens.***It was discussed with the operator that ice water baths will be used to store used kitchen utensils and promptly refreshed when the ice completely melts or when the water appears to be soiled. Operator promptly replaced the water with an ice water bath for utensil storage on the cookline.
